hello monday! this is the week where we get back to regular blogging. this is the week i start doing stuff for me. this is the week where there is finally a little less weight on my shoulders. and knowing that i’ll never be given more than i can handle is such a comfort.
it’s our first day of spring break and i’m celebrating by calling a family pajama day. because spring break in wisconsin is looking like snow covered ground and mid-30s.
because of house showings and open houses, our menu got a little sidetracked again. looking forward to getting some new things made this week from the 2013 cookbook challenge i joined.
here’s what we’ll be eating this week :
meatless monday : fried brown rice with green beans and balsamic vinegar. from whole grains for a new generation. a new one from last week’s menu that got pushed aside. looking forward to giving it a try. love knowing in advance what we’ll be eating for dinner, as do the girls.
i’ve selected monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. my meat and potato eating husband tends to go along with this idea because i also make him a yummy dessert in addition to his meatless meal. what can i say, i’m nice like that.
tuesday : chicken mango lettuce cups. from steamy kitchen’s healthy asian favorites. another that was supposed to be on last week’s menu. we love lettuce wraps so i have no doubt this one will be a winner.
wednesday : leftovers. a perfect mid-week option for cleaning out the fridge.
thursday : chicken pot pie soup. a new pinterest find. would love to try and make this into a slow cooker recipe…
friday : pepperoncini beef sandwiches. a favorite of andy’s that i found a year or so ago. two ingredients in the slow cooker and a delicious dinner awaits.

honey-mustard drumsticks. from slow cooker revolution. as i went to prepare this for dinner, i noticed the recipe on the opposite page was for bbq drumsticks and i had all the ingredients necessary. a quick family vote had me switch gears and i made the bbq version instead. seriously AMAZING. if this is the only recipe that i ever make from this book, it would be worth the asking price. super easy and like eating summer on a plate. excited to have leftovers for lunch today! will have to give the honey-mustard version a try next.
