this past weekend, instead of spending time with friends and being a bit pampered, i was packing boxes and cleaning out my pantry. a big thanks to delta airlines for that little change in plans. at least it gave me some motivation for our menu this week as i found items tucked away that needed to be used. pretty much the basis of this week’s menu!
here’s what we’ll be eating this week :
meatless monday : southwestern black bean, quinoa and mango medley. didn’t get to this one last week as there were no mangos to be found on my shopping trip last week. this week marks take two.
i’ve selected monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. my meat and potato eating husband tends to go along with this idea because i also make him a yummy dessert in addition to his meatless meal. what can i say, i’m nice like that.
tuesday : easiest crockpot salsa verde chicken. i found a bottle of salsa verde in the pantry and remembered this recipe that gina posted a few weeks ago. perfect! i’m thinking i’ll make it into tacos with some tortillas i also spied that i already have on hand.
wednesday : sundried tomato crockpot risotto. we haven’t had this in forever but it instantly came to mind when i found just enough arborio rice in the pantry yesterday.
thursday : pasta w/ marinara sauce. another one we didn’t get to last week. perfect for a lot of people as andy’s parents are arriving for a long weekend to celebrate carson’s birthday a week early. love the sauce from my cook 1.0 cookbook.
friday : pizza. andy’s parents are kind enough to watch my children so that i can go get my haircut. making dinner an easy one! there’s only a few more weeks of pizza from our favorite local place.
new recipe reviews
slow cooker sweet and spicy chicken. although i had high hopes with the wafting smells from my slow cooker last week, this was just okay. i really liked the raisins in it but nobody seemed absolutely thrilled with it. leftovers were sliced and then put into quesadillas for a quick lunch.
edamame + veggie fried rice. yum! and super easy. the perfect quick dish on an 80+ degree night last week. an added bonus? we were able to eat outside so that the mess from a baby eating rice was simply swept away.
