A shortened work/school week for us due to the Columbus Day holiday today – thank you Mr. Columbus for discovering America! With the weather getting cooler, I’m happy to bring out more hearty and comforting dinner recipes.
Here’s what we’ll be eating this week :
Meatless Monday : Lentil and Brown Rice Tacos. These couldn’t be any easier and I’ve found we prefer them over traditional ground beef tacos.
I’ve selected Monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. My meat and potato eating husband tends to go along with this idea because I also make him a yummy dessert in addition to his meatless meal. What can I say? I’m nice like that!

Tuesday : Easy Chicken Pot Pie. We haven’t had this is like an entire month. Of course it was Andy’s top choice for this week’s menu. Yum!

Wednesday : Asian BBQ Turkey Lettuce Wraps. This is such a quick meal to put together. I love being able to make the turkey mixture earlier in the day during naptime when I have some time and putting in in the slow cooker to keep warm until dinner time.
Thursday : Cheesy Chicken Orzo. Another favorite that rarely leaves us with leftovers – even when I double it to feed our family of five.

Friday : Pizza. Nothing better than a pie with the Perfect Pizza Crust! Even if we don’t have pizza on Friday, I love having all the ingredients on hand as it makes an easy meal no matter what night of the week it may be.
