Here’s what we’ll be eating this week:
Meatless Monday: Lemon Arugula Pasta. One of our 6 year old daughter’s favorite dishes. Mine too! A super easy meal to begin our week and one that she can help prepare as well. Win/win!
I’ve selected Monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. My meat and potato eating husband tends to go along with this idea because I also make him a yummy dessert in addition to his meatless meal. What can I say? I’m nice like that!
Tuesday: Pineapple Pork Chili. A super quick weeknight meal, perfect for the rainy day the weatherman is predicting!
Wednesday: Indian Butter Chicken. The reason my children love this dish so much? I always serve it with naan. Proof that they are indeed my children as bread is the way to their heart.
Thursday: Chipotle Raspberry Chicken Enchiladas. A sweet and spicy mix and a fun twist on a traditional Mexican favorite.
Friday: Pizza. We love to begin our weekends with pizza and on Halloween night, it’s the perfect quick meal to have on the table before heading out to fill our pumpkins with candy! No matter what toppings we choose, my Perfect Pizza Crust is always the base.
