After a great weekend of house guests, it’s time to get back to our everyday schedule. I’m sure there’s bound to be a tantrum or two thrown in just to keep me on my toes. Nothing that a comforting meal can’t help!
Here’s what we’ll be eating this week :

Meatless Monday : Roasted Cumin-Lime Eggplant Quesadillas. These have so much flavor! I absolutely love eggplant and if left to my own devices could eat an entire pan of this quesadilla filling. I promise it’s that good!
I’ve selected Monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. My meat and potato eating husband tends to go along with this idea because I also make him a yummy dessert in addition to his meatless meal. What can I say? I’m nice like that!
Tuesday : Thai Chicken and Coconut Soup. I was so excited when Stephanie’s soon-to-be released cookbook arrived Friday evening! I’m one of her biggest fans and can’t wait to try this flavor combination in soup form. Look for a review next week!

Wednesday : Chipotle Corn Turkey Burgers. Time to put these back into our meal rotation! These burgers are quick to put together and are just as great cooked indoors on a grill pan or outdoors on the grill.
Thursday : Honey Lime Chicken Soft Tacos. Another recipe from Stephanie’s new book. I love having dinner waiting for us in the evening with minimal effort on my part in the morning. This recipe will be easy to put together in the morning while the menagerie eats their breakfast.

Friday : Pizza. It wouldn’t be Friday without pizza made with the most Perfect Pizza Crust.
