So hard to believe that it’s the last day of the month and that October begins tomorrow! This weekend, we joined thousands of other Clevelanders – is that what they call themselves? – in getting outside and enjoying a few of the last beautiful days before winter arrives. Nothing crazy on this week’s schedule. We’re just keeping on keeping on. I’m good with that.
Here’s what we’ll be eating this week :
Meatless Monday : Angel Hair with Corn, Feta and Tomato. A new recipe from Micheal Symon’s new 5 in 5 cookbook that I’m really enjoying. My dear husband doesn’t like Feta so we’ll see how this one goes over…
I’ve selected Monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. My meat and potato eating husband tends to go along with this idea because I also make him a yummy dessert in addition to his meatless meal. What can I say? I’m nice like that!
Tuesday : BBQ Drumsticks. I noticed drumsticks on sale last week during my weekly grocery shopping trip and immediately thought of these. I haven’t made them since April but I’ve been looking forward to them since I purchased the chicken. Super easy and awesome for someone like me that doesn’t grill. I leave that to the husband.
Wednesday : Thai Chile Peanut Meatballs. We haven’t had this for a few weeks and I seem to be on a bit of a Thai food kick as of late. The last few times I’ve served this over noodles instead of rice and it’s been a hit!
Thursday : Chicken Tikka Masala. Andy’s favorite Indian dish. I have a recipe I love but it’s time intensive. Wanting to give this recipe from Stephanie’s new book a try to see how it measures up.

Friday : Pizza. Is it possible for one to ever get tired of pizza? I’m voting no. I always make our pies with this Perfect Pizza Crust as a starting point. In Madison we had a Mac and Cheese pizza and I’m wanting to try making one of our own this week. Stay tuned.
New Recipe Review from Last Week
Thai Chicken and Coconut Soup. Quite possibly my new favorite soup dish created with my slow cooker. Warm and comforting and easy to put together after I had gotten the girls off to school. Well, easy if you count that I was working with a small boy grasping onto one of my legs.
Honey Lime Chicken Soft Tacos. Love the hint of sweetness the honey lends to this recipe. I used some Tabasco on mine to spice things up but the kids, and Andy, all enjoyed this one.
