We’re starting week two without a range. Still just beyond thankful that we finally sold the other one after three months of listing it on craigslist.
The good news is that I doubt it’ll be much longer than another week or two until it arrives. I can’t even begin to tell you how excited I am! The plumber comes Saturday to install a gas line to the kitchen. Looking for a great paying job? Become a plumber in Cleveland. Andy and I both think that the prices are super high. They make more an hour than Andy. Crazy!
Here’s what we’ll be eating this week :

Monday : Yogurt Waffles. Ever since I added chocolate chips to the batter, this has become a much more frequent meal. A sweet way to start our week!
I’ve selected Monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. My meat and potato eating husband tends to go along with this idea because I also make him a yummy dessert in addition to his meatless meal. What can I say? I’m nice like that!
Tuesday : Crockpot Buffalo Chicken Lettuce Wraps. LOVED these the last time we had them and can’t wait to have them again! I actually enjoy these more as a salad than a wrap and the leftovers are equally awesome.
Wednesday : Salsa Chicken. We actually prefer these in the form of nachos. I actually prefer it as a quesadilla filling. Beyond easy and filling.

Thursday : Thai Chile Peanut Meatballs. The slow cooker continues to get a workout this week…
Friday : Pizza. Nothing better than a pie with the Perfect Pizza Crust! Even if we don’t have pizza on Friday, I love having all the ingredients on hand as it makes an easy meal no matter what night of the week it may be.
