Hands down one of my most favorite pasta dishes. Even better? It’s a favorite of everyone else around our dinner table. Well, except for the baby. She just started solids so sausage and pasta might be a bit advanced at this point in the game. But for the rest of us? This One Pot Sausage and Peppers Pasta is a bowl of comfort food perfection.

My recipe is version of a recipe I first made when my husband and I were dating and I would make myself at home in the kitchen of his apartment. If a recipe has that much staying power in my kitchen, you know it has to be good! I’ve simply upped the amount of peppers and onions as well as made it a one pot dish. There’s no sense dirtying more dishes than necessary, right? I had a feeling you might agree.

Ingredients
- 1 pound Italian sausage links, casings removed and cut into 1" pieces
- 2 large onions, sliced
- 4 sweet orange and/or yellow peppers
- 6 garlic cloves, minced
- 4 cups chicken broth
- 1 28-ounce can crushed tomatoes
- 1 14.5-ounce can diced tomatoes
- 1 6-ounce can tomato paste
- 2 tablespoons sugar
- 2 teaspoons cumin
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon pepper
- 1 pound short cut pasta
- Parmesan cheese, to garnish
Instructions
- In a large dutch oven over medium heat, add Italian sausage and brown pieces on all side.
- Remove sausage from dutch oven and set aside.
- Add onions, peppers and garlic to dutch oven and cook for 5 minutes.
- Stir in chicken broth, crushed tomatoes, tomato paste, sugar, cumin, cayenne pepper and pepper and bring to a boil.
- Return sausage to dutch oven and add pasta. Cook until pasta is al dente, stirring occasionally.
- Garnish with Parmesan cheese prior to serving, if desired.
Select any shortcut pasta for this dish and use the product packaging as a guideline for how long to cook once the mixture is boiling. Rigatoni is my favorite pasta and it takes 10 minutes to reach al dente. Be sure not to overcook as the pasta then tends to become mushy and not retain it’s shape.
