Our dinner menu consisted of my Turkey Meatloaf, make ahead Aunt Ruthie Mashed Potatoes and a garden salad. Except I felt like I was missing something. Why do I always struggle with side dishes? I ended up digging through my recipe folder in my inbox and found a recipe for “gourmet onions” from my friend Sarah that I had filed away back in 2010. It was definitely the inspiration I was looking for and was the jumping off point for these Oven Roasted Sour Cream and Parmesan Onions.

Sarah’s original recipe called for slicing onions and sautéing them in oil before baking them. I decided I wanted to spend less time in the kitchen and have fewer dishes to wash so my recipe is a bit different. Instead, I oven roasted the onion rounds in the same pan that the finished dish is served in which means a sweeter onion flavor and one less dish to wash. I’m winning all the way around with this one, my friends!

Onion rounds are drizzled in olive oil and oven roasted before being slathered in a sour cream and Parmesan cheese sauce and baked until golden brown. I mean, when your two year old is inhaling onions without a second thought, you know she’s your child.

Oven Roasted Sour Cream and Parmesan Onions
Ingredients
- 3 medium onions peeled and cut into 1/4" rounds
- 3 tablespoons olive oil
- 2 eggs
- 8 ounces sour cream
- 1-1/3 cups grated Parmesan cheese divided
Instructions
- Preheat oven to 375 degrees.
- Lay onion rounds on bottom of 9x13 pan.
- Drizzle onions with olive oil and season with salt and pepper.
- Bake for 15 minutes.
- Meanwhile, in a small bowl, whisk together eggs, sour cream and 2/3 cup Parmesan cheese.
- Remove onions from oven and raise temperature to 425 degrees.
- Pour sour cream mixture over onions and smooth into an even layer.
- Sprinkle remaining Parmesan cheese over sour cream mixture and season with additional salt and pepper.
- Bake for 25-30 minutes or until golden and bubbly.
