So yesterday was the first day of our two week winter break from school activities, basketball and swimming practices. Hooray! Unfortunately, our break got off to a not so good start when I opened the door to our guest bedroom – the same room where Andy’s parents will be staying at the end of the week – and saw two waterfalls pouring from the ceiling thanks to our brutal weekend temperatures and a busted water pipe. After a few choice words, luckily out of ear shot from the menagerie, I went to work figuring out how to turn off the water to the house, scheduling a plumber and then a water restoration company to help save the carpet, mattress and walls. Did I mention the water was pouring directly onto the guest bed? The same one that my sister-in-law was sleeping in just two nights prior?

So with the water shut off for the entire house and nothing to do but wait for our afternoon appointment with the plumber, I decided to crank out another batch of Peppermint Bark Brownie Bites. I had made four dozen of these last week for two different school holiday parties. Baking tends to be my go-to when stressed, plus freshly baked goods for those making service calls never seem to hurt! These bite size holiday inspired treats earned rave reviews from the plumbers and water restoration technicians. I also sweetened their day with Magic Cookie Bar Cookies, straight from the cookie jar. They took such good care of us, it was the least I could do!

I’m such a fan of peppermint flavored desserts around the holiday and love that I’ve added these Peppermint Bark Brownies Bites to my sweet treat lineup that has included these soft and chewy Mocha Peppermint Crunch Cookies and this fudgy Triple Chocolate Peppermint Skillet Cookie in previous years. These easy treats are the perfect last minute addition to your Christmas and New Year’s Eve dessert menu. If I can make them with a guest bedroom that boasts two waterfalls, I’m pretty sure you have no excuse but to head to the kitchen and get started.

Ingredients
- 5 tablespoons butter
- 2 ounces unsweetened chocolate
- 1 ounce semisweet chocolate
- 2/3 cup sugar
- 1 egg
- 1 teaspoon vanilla
- 2/3 cup flour
- 1/4 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 24 peppermint bark candies (I used Hershey's Peppermint Bark Bells)
Instructions
- Preheat oven to 350 degrees. Grease mini muffin pan and set aside.
- In a double broiler, melt butter and chocolate over simmering water. Stir frequently, being careful not to burn.
- Remove from heat and stir sugar into chocolate until well blended. Let cool to just warm.
- Beat egg and vanilla into chocolate mixture until smooth.
- Add flour, baking soda and salt to chocolate mixture and stir until just combined.
- Spoon a tablespoon of batter into each muffin cup well.
- Bake for 10 minutes or until middle is almost set. Immediately press a peppermint bark candy into each brownie bite so that the top of the candy is flush with the top of the brownie.
- Completely cool in muffin tin before removing.
