Way back when I first started blogging and before my space become food centered and titled Melanie Makes, I wrote simply of what my husband and I were up to and the journey through medical school. If I’m going to pick an animal protein for a meal, pork would likely not be my first choice but, this dish? It’s absolutely divine. A total game changer. If you filled a bathtub with the Soy Caramel Sauce, I’d gladly jump in to insure I could enjoy it all without sharing. TMI?

Thyme Crusted Pork Roast with Soy Caramel Sauce
Ingredients
Thyme Crusted Pork Roast
- 1 2- pound pork tenderloin roast
- 1 tablespoon fresh cracked black pepper
- 2 teaspoons chopped fresh thyme
- 1/4 teaspoon salt
- 1 pound small Yukon Gold potatoes
- 1 large onion quartered
Soy Caramel Sauce
- 1 cup water
- 1 teaspoon ground ginger
- 4 garlic cloves minced
- 1/2 cup brown sugar
- 1/4 cup soy sauce
- 2 tablespoons red wine vinegar
- 2 tablespoons Dijon mustard
- 3 tablespoons butter
Instructions
Thyme Crusted Pork Roast
- Preheat oven to 350 degrees.
- Rub pork roast evenly with pepper, thyme and salt.
- Heat a 12" cast iron skillet over medium high heat.
- Add pork roast to skillet, browning on all sides. Remove from heat and add potatoes and quartered onion around pork roast.
- Bake for 50 minutes.
Soy Caramel Sauce
- Meanwhile, in a small saucepan over medium heat, add water, ginger, garlic and Splenda Brown Sugar Blend. Whisk until combined.
- Bring to boil and cook until mixture is reduced to approximately 1/2 cup.
- Remove from heat and whisk in soy sauce, red wine vinegar, mustard and butter. Keep sauce warm over low heat.
- Remove pork from oven and pour Soy Caramel Sauce over pork roast, potatoes and onion. Return to oven and bake until thermometer inserted into largest part of roast registers 160 degrees, approximately 20 minutes.
- Let pork roast stand for 10 minutes prior to slicing and serving.
