Here’s what’s on our family meal plan this week:
Meatless Monday: Creamy Pecorino Spaghetti with Toasted Bread Crumbs. If this doesn’t sound like a comforting way to start your week, I don’t know what does!
I’ve selected Monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. My meat and potato eating husband tends to go along with this idea because I also make him a yummy dessert in addition to his meatless meal. What can I say? I’m nice like that!
Tuesday: Walking Tacos. These always remind me of the concession stand after my high school basketball games. Such a fun dinner idea!
Wednesday: Crockpot Roast Enchiladas. I love how the slow cooker can make dinner so easy! I have a couple of roasts I’ve been saving for a new recipe and this looks like a perfect one to try!
Thursday: Slow Cooker Beef and Guinness Pot Pie Soup with Thyme Puff Pastry Croutons. This earned rave reviews from my family, especially the croutons!
Friday: Pepperoni Florentine Pizza. The perfect way to start your weekend is with pizza! Love the addition of greens in this pizza from Ashley.
Breakfast: Sausage Breakfast Bagel Strata. I’d love to wake up to this cooking in my oven – a great use for leftover bagels!
Dessert: Pumpkin Roll Bars. It’s definitely the season for all things pumpkin and this one takes the work of actually making a pumpkin roll. Sounds good to me!
