Here’s what’s on our family meal plan this week:
Meatless Monday: Black Bean Tostadas with Corn Relish. One of our favorite meatless meals and perfectly customized to everyone’s preferences. I may or may not garnish mine with an entire avocado…
I’ve selected Monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. My meat and potato eating husband tends to go along with this idea because I also make him a yummy dessert in addition to his meatless meal. What can I say? I’m nice like that!
Tuesday: Pizza Pitas. Handheld pizza? Count me in!
Wednesday: Slow Cooker Chicken Marsala Stew. I’ve had my eye on this stew all week. Comfort food perfection!
Thursday: Paleo Orange Chicken. A healthier version of a take-out favorite? Count me in!
Friday: One Pot Spaghetti and Meatballs. This one pot meal not only sounds delicious but it means less clean-up afterwards. Score!
Breakfast: Banana Chocolate Chip Fluffernutter French Toast Casserole. Yes, it’s likely one of my most over the top recipes and pretty much dessert at breakfast. I’m sure I won’t hear anyone complain.
Dessert: Cranberry Chocolate Chunk Blondies. Chocolate and cranberry are a winning combination and perfect for this seasonal bar cookie.
