Here’s what’s on our family meal plan this week:
Meatless Monday: Veggie Tortilla Soup with Quinoa. With temperatures in the 60s and rain this weekend, I’m thrilled that soup weather has arrived! This is a great veggie option to begin the week with.
I’ve selected Monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. My meat and potato eating husband tends to go along with this idea because I also make him a yummy dessert in addition to his meatless meal. What can I say? I’m nice like that!
Tuesday: Pizza Casserole. I’ve been craving pizza something fierce this past week. There’s always room for pizza on a weekly menu!
Wednesday: Barbecue Chicken Pizza Skillet Lasagna. A one skillet meal that disappears quickly! A combination of two of our favorite meals and a guaranteed winner.
Thursday: Honey Balsamic Pulled Pork. Honey and balsamic is a winning flavor combination and this pulled pork can be transformed into so many ways! Pizza, quesadillas, sandwiches – the list is long!
Friday: Creamy Mushroom and Chicken Pizza. More pizza and this one is more original than your typically pepperoni!
Breakfast: Maple Bacon Yeast Waffles. I’ll take a giant stack of these with extra syrup, please.
Dessert: Chocolate Peanut Butter Bacon Cake. Bacon for breakfast and then again for dessert. Winning!
