Here’s what we’ll be eating this week:
Meatless Monday: Cherry Tomato and Tortellini Soup. One of my favorite soups to make for other families. In fact, I just brought it to a friend who brought home a new baby this past weekend. Super easy and full of flavor. Do yourself a favor and double this recipe!
I’ve selected Monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. My meat and potato eating husband tends to go along with this idea because I also make him a yummy dessert in addition to his meatless meal. What can I say? I’m nice like that!
Tuesday: Porcupine Meatballs. The perfect cold weather comfort food. I love to make them ahead of time and then simply bake them come dinner time.
Wednesday: Slow Cooker Cola Barbecue Beef. One of the first slow cooker meals I began making when we got married and it’s still a hit 12+ years later!
Thursday: Cheeseburger Chimichangas. I’ve put a new spin on burger night with this dish! Topped with onion rings, you simply can’t go wrong!
Friday: Pizza. No matter what toppings we choose, my Perfect Pizza Crust is always the base and the perfect way to kick off the weekend.
