Hawaiian bread, mascarpone cheese, fresh strawberries and rhubarb strawberry preserves combine to create a Strawberry Rhubarb Grilled Cheese that is nothing short of melty perfection. Each sandwich is served alongside a velvety chocolate ganache which acts as the ultimate dipping sauce for this sweet treat.
Happy National Grilled Cheese Month! If there’s one thing that my menagerie can agree upon at any given time, it’s their love of melty cheese sandwiched between two pieces of toasty bread. The fact that they choose to order it when we are out a restaurant? A bit unnerving. I mean, paying an inflated price for a grilled cheese is something that drives me crazy! (Please tell me I’m not alone…)
But forget the white bread and the slices of cheddar. Oh, no my friend! Today I’m bringing you something much more memorable. May I present to you, my Strawberry Rhubarb Grilled Cheese which may or may not be accompanied by a chocolate ganache dipping sauce. Sure, it’s optional but really by now you should know of my love for all things chocolate ganache so my brain says definitely not optional!
Sure, this sandwich sounds a little hoity toity but that couldn’t be further than the truth! In fact, I was able to quickly whip up four of these sandwiches while three of my little ones were playing in the backyard and the other was watching golf with her daddy.
Two pieces of Hawaiian bread are buttered on one side. The other side of one is smeared with mascarpone cheese while the other slice is slathered with Robert Rothschild Farm’s Rhubarb Strawberry Preserves. This isn’t your typical strawberry jam, my friends. The addition of rhubarb makes it something truly special and will have people guessing what your secret sandwich ingredient is! Slices of fresh strawberry are added on top of the cheese before sandwiching the two slices of bread together and grilling until toasted on both sides. The resulting melty goodness is nothing but perfection.
And then there’s the topic of that chocolate ganache that I mentioned earlier… A melty dessert worthy grilled cheese dipped in a large puddle of chocolatey goodness is sure to the sweetest spot of your day. And have your children requesting another sandwich even while their gobbling down the one you just set before them!

Ingredients
- 4 tablespoons butter
- 8 slices Hawaiian bread
- 8 ounces mascarpone cheese
- 10.5 ounces Robert Rothschild Farm Rhubarb Strawberry Preserves
- 1 pint strawberries, washed, hulled and sliced
- 1 cup dark chocolate chips
- 6 tablespoons heavy whipping cream
Instructions
- Heat griddle or large skillet over medium-low heat.
- Butter one side of each slice of bread. Turn over.
- Spread mascarpone cheese on four slices of bread.
- Spread Rhubarb Strawberry Preserves on remaining four slices of bread.
- Place sliced strawberries on top of cheese, covering surface of bread.
- Sandwich cheese and preserve slices together, with butter on the outside, to create four sandwiches.
- Add to griddle or large skillet and cook until golden brown. Flip sandwiches to other side to brown until desired shade.
- In a microwave safe bowl, add chocolate chips and whipping cream. Microwave for one minute.
- Stir chocolate and cream together until combined.
- Serve in a bowl alongside sandwich for dipping.
Obviously this sweet grilled cheese would make an incredible dessert but I’m also thinking it would be welcomed by anyone and everyone as an addition to your breakfast or brunch offerings. With Mother’s Day around the corner, I’m betting that mom would enjoy one of these Strawberry Rhubarb Grilled Cheese sandwiches as well. I know this mama would!
