I love how food has the ability to transport you to a specific time in your life. This Corn Casserole? It brings me to the hectic days of welcoming a new baby into our home, baby number three, and the kindness of a friend who made us an amazing meal that included this amazing side dish. We INHALED it and I found myself e-mailing a request for the recipe that night. Pretty amazing given that I’m sure I was in that newborn fog and likely hadn’t even gotten to shower that day.
When I received the return e-mail with the requested recipe, I couldn’t believe how easy it was. Just six ingredients and everything was simply stirred together and added to a casserole dish to bake. You now know the reason why we enjoy this side dish quite frequently! It’s actually been used as payment to my sister-in-law for babysitting for us on occasion as well. You know what they say, food is the way to the heart!
And now I finally have the perfect Le Creuset Square Dish to make my Cheesy Corn Casserole in for Easter. That Hibiscus color? Absolutely stunning in person. The perfect shade of pastel pink suitable for a Spring meal or really a meal any time of year! I’m such a fan of Le Creuset as they’re quality stoneware pieces that I know that will last me forever. I love that they’re perfect for not only preparing food, but for serving at the table as well. And they keep the food warm for longer than a typical dish.
