As our oldest child gets older, I find more and more things we have in common. Our love of reading, basketball and willingness to try any new foods are just the first few that come to mind. Granted we’re also both first born people pleasers and love to be in control of situations which sometimes also causes us to butt heads, but I’m finding that the good far outweighs the bad most days.
This Grasshopper Ice Cream Tart began as a great idea for a St. Patrick’s Day dessert but then quickly became a test run as an alternative birthday cake idea for my sweet girl.
You see, we both share a strong love of mint chocolate chip ice cream. Each Friday, we head to our new favorite ice cream shop and nine times out of ten, we’re both ordering the same thing.
We also love Oreos, and well, just chocolate in general. When I told her what I was making and what ingredients were being used (not real grasshoppers!) she couldn’t wait to try a slice. And once she did? She instantly decided that this year she’d be having this Grasshopper Ice Cream Tart in place of a birthday cake next month. You know I’m not complaining!
What is a Grasshopper?
In this case, the Grasshopper being referred to is not an insect but rather a cocktail. A Grasshopper is a sweet, mint-flavored, after-dinner drink which received its name from its green color, which comes from crème de menthe. An old classic that’s very simple, it tastes like a chocolate mint milkshake and is definitely the flavor inspiration behind this Grasshopper Ice Cream Tart.
This no bake Grasshopper Ice Cream Tart couldn’t be easier or more delicious. A thick Oreo crust is topped with my Microwave Chocolate Ganache, mint chocolate chip ice cream and whipped topping before being garnished with dark chocolate curls. So many favorites in every single bite!
So whether you’re celebrating St. Patrick’s Day, a birthday or any other day of the year – I mean, this Grasshopper Ice Cream Pie would also make an amazing Christmas dessert! – I have no doubt it’ll be well received. I know it was at our house! In fact, there might’ve been a skirmish between all six of us as to who was going to get the last slice.

How to Make Grasshopper Ice Cream Tart
[1] In the bowl of a food processor, add Oreos.
[2] Process cookies on high speed until they are evenly sized crumbs, approximately one minute.
[3] Add butter to a small saucepan.
[4] Over low heat, melt butter.
[5] Remove blade from food processor bowl and pour in butter.
[6] Stir together Oreo crumbs and butter until combined and no liquid remains.
[7] Press Oreo crumb mixture into an even layer in the bottom and up sides of a 9″ tart pan with removable bottom.
Place in freezer for 15 minutes.
TIP: To insure that the crumb mixture is in an even layer, I like to use the bottom of a glass to gently press the mixture into the pan.
[8] Prepare Microwave Chocolate Ganache per recipe instructions. Spread 1 cup of ganache into an even layer in center and up sides of crust.
Place in freezer for 10 minutes. Meanwhile, allow ice cream to soften at room temperature while ganache sets.
[9] Spoon softened ice cream into center of tart crust over ganache and spread into an even layer.
Cover tightly with plastic wrap and freeze for at least two hours or as long as overnight.
TIP: Depending how how thick your layers of crust and ganache are, you might not use all of the ice cream.
[10] Prior to serving, top tart with whipped topping.
[11] Garnish top of tart with mint cookies, placing them vertically into the whipped topping at equal intervals.
[12] Place chocolate curls into center of tart.
TIP: Not sure how to make chocolate curls? No problem! Smaller curls can be made by simply using a vegetable peeler along the side of a chocolate bar. If you’d like to make larger curls like these, this tutorial is great.
