When you consider that the average American eats about 20 quarts of ice cream a year, that means a lot of milk is being put to good use! I have no doubt that I’m above average and consume more than 20 quarts each year. What can I say, I’m just doing my part! My Strawberry Cheesecake Ice Cream Pie is a variation of a family recipe and is perfect for summer get togethers or just to enjoy at the end of a long summer day. Strawberry cheesecake ice cream is swirled together with cheesecake pudding and whipped topping before being poured into a graham cracker pie shell. It’s then frozen before being garnished with slices of juicy strawberries and a pillowy cloud of additional whipped topping. A dusting of graham cracker crumbs is the perfect finishing touch. All the rich deliciousness of cheesecake combined with the refreshing taste of ice cream to create a fabulous dessert in under 10 minutes. Perfection!

This pie is also the perfect dessert to celebrate National Ice Cream Day on July 19. Although vanilla is the most popular ice cream flavor in America, it’s followed by Chocolate, Neapolitan & Strawberry in popularity. Ice Cream + strawberry = a winning combination!

Strawberry Cheesecake Ice Cream Pie
Ingredients
- 1 3.4- ounce box cheesecake flavored instant pudding
- 1 cup milk
- 4 cups strawberry cheesecake ice cream softened
- 8 ounces whipped topping divided
- 9 ounce graham cracker pie shell
- 4 strawberries sliced
- 2 graham crackers crushed
Instructions
- In a large bowl, whisk together pudding and milk. Let set for 5 minutes.
- Stir in softened ice cream and half of the whipped topping.
- Spoon ice cream mixture into pie shell and freeze until solid.
- Prior to serving, garnish top of pie with sliced strawberries around edge of pie shell and the remaining whipped topping in the center of the pie.
- Sprinkle graham crackers over whipped topping.
