Even though my team didn’t make it to the big dance this year, or anywhere close for that matter, this year, I’ve still watched more than my fair share of games and cheered loudly for anyone playing kansas. As a Mizzou grad, my disdain for our former arch nemesis runs deep. Sidenote, we just scored the number one recruit in the nation so I have lofty goals for our Tigers next year! Another sidenote? Dear kansas, stop being petty and renew our rivalry. Anyway… What goes best with basketball games? Snacks. Lots and lots of snacks. My newest favorite is this Pesto Yogurt Dip that I surround with fresh vegetables, cheese and crackers with hopes it lasts me from tip-off until the final buzzer.
I love making huge trays like this that you can easily customize to fit everyone’s favorites. With six of us in our family, and when we have friends or additional family over, making sure to include what everyone likes is key to good snacking. Fresh vegetables, a few wedges of cheese, a bit of fruit, various crackers and of course, the centerpiece is my Pesto Yogurt Dip. Looking for more dips to go with your spread? I’m hoping you won’t laugh when I tell you just how easy this Pesto Yogurt Dip truly is. Two ingredients and five minutes are all it takes to be ready for snack time. All it takes is two of your favorite store bought ingredients. In this case, I reached for my trusty Nancy’s Whole Milk Plain Yogurt which I tend to buy three tubs at a time because I use it for everything. I also snagged some basil pesto from Blue Moose of Boulder. I love that it’s local, all-natural and made in small batches. Stir the two together and and it’s nothing short of snacking success!
Pesto Yogurt Dip
Ingredients
- 1 cup whole milk plain yogurt
- 3 tablespoons prepared pesto
- additional pesto to garnish if desired
Instructions
- In a small bowl, stir together yogurt and pesto.
- Prior to serving, swirl additional pesto over the top of dip.
- Serve with vegetables.
