Yes, it’s Menu Plan Monday on a Tuesday. That’s how things are going this week. A short school day yesterday because a power outage cancelled school and conferences last week, Halloween and house guests at the end of this week. I tell you, we are so bored around here! *wink, wink*
Here’s what we’ll be eating this week :
Monday : Balsamic Vinegar Chicken with Tomatoes. There were three different meals going on last night. Andy had a dinner to attend after parent/teacher conferences, I fixed the menagerie something to eat before we left and I enjoyed leftovers of this dish once I returned home. Thanks to Nicole for sharing the link. Not sure why it’s called Balsamic Chicken as there’s all of one teaspoon in the dish, but it’s delicious nonetheless.
Tuesday : Oven Baked Chicken Fajitas. One of our favorites that we haven’t enjoyed in far too long. We’re changing that tonight!

Wednesday : Slow Cooker Lemon Chicken. It couldn’t be easier to toss the items for this dish into the slow cooker for dinner. Not only is it easy, it’s amazingly flavorful as well!
Thursday : Pizza. I always get the Jack ‘O Lantern pizzas from Papa Murphy’s for our Halloween dinner. Which makes me realize I need to do some Google searching to see if those even exist here…

Friday : Baked Spagansa. This dish has almost become a given when Andy’s parents are visiting. We all enjoy it and it feeds a crowd easily with leftovers as well. Not many dishes can feed five adults and three children like that!
New Recipe Review From Last Week
Crockpot Buffalo Chicken Lettuce Wraps. AWESOME. Especially as I made Gina’s Blue Cheese Dressing as well. So good! I enjoyed it for lunch as a salad as well. Heat and crunch together = perfect.
