Here’s what we’ll be eating this week:
Meatless Monday: Four Cheese and Spinach Stuffed Shells. It’s been awhile since we’ve had these and they’re always such a hit. I love that I can get everything prepped during lunch and then simply put it in the oven to warm through right before serving.
I’ve selected Monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. My meat and potato eating husband tends to go along with this idea because I also make him a yummy dessert in addition to his meatless meal. What can I say? I’m nice like that!
Tuesday: Chili Lime Chicken Drumsticks. Love how easy these drumsticks are to create, even on a weeknight, thanks to the use of a slow cooker and your range’s broiler.
Wednesday: Balsamic Vinegar and Honey Pulled Pork Sliders. The flavors in this easy slow cooker recipe are just perfection.
Thursday: Rosemary Citrus Shrimp Tacos. A 15 minute main dish? YES! The hardest part is slicing a few bell peppers. Totally doable!
Friday: Bacon Double Cheeseburger Pizza. My new favorite pizza combining two American favorites – pizza and burgers.
