Here’s what we’ll be eating this week:
Meatless Monday: Cherry Tomato and Tortellini Soup. One of my most favorite – and easiest! – soups. Do yourself a favor and double the recipe in the hopes that you might have leftovers.
I’ve selected Monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. My meat and potato eating husband tends to go along with this idea because I also make him a yummy dessert in addition to his meatless meal. What can I say? I’m nice like that!
Tuesday: Enchilada Casserole. When I think comfort food, this is the dish that immediately comes to mind. Pass the hot sauce!
Wednesday: Honey Glazed Peach and Pork Tenderloin Grilled Cheese. Not your average grilled cheese! Love the combination of sweet peaches and tangy blue cheese. Delicious!
Thursday: Pumpkin Pasta with Sausage and Apples. A savory pumpkin dish that is like an Autumn harvest on a plate!
Friday: Slow Cooker Chipotle Chicken Soup. Another easy soup! I’ve been all about spice as of late and the chipotle in this soup gives it such a great smoky flavor.

TOUR THROUGH BLOGLAND
Last Monday, Mara of Hook, Thread & Tinker asked me to join the Tour through Blogland. I met Mara in the online scrapbooking world back when I devoted more of my free time to it. Unfortunately, I’ve strayed from the hobby but hope to get back to it in the new year. Fingers crossed!
WHAT AM I WORKING ON?
Besides growing a human, keeping on top of the everyday chaos of our home is always my top priority. And chaos in this sense isn’t a bad thing. There are nine living creatures in our home so someone or something is always needing my attention. Lately I’ve been in full on trying to make this house a home mode and we revamped the living room this weekend. Love the end result.
HOW DOES MY BLOG DIFFER FROM OTHERS OF ITS GENRE?
I try not to be over the top. I try to keep things real. I’m simply putting a different spin on foods you’re likely already familiar with. As my tagline says, I’m trying to make everyday eats a bit more interesting. Hopefully you’d agree!
WHY DO I WRITE/CREATE WHAT I DO?
I’m a creative type – always have been, always will be. I have a degree in interior design, I’ve scrapbooked and turned that hobby into several jobs and I’ve always loved to cook. The best part about being in the kitchen? It’s a great hobby but one that you also need to do on a daily basis – it’s a win/win!
HOW DOES YOUR WRITING/CREATING PROCESS WORK?
Currently, I’ve revamped my editorial calendar so I’m posting more like every other day instead of everyday in the hopes that I avoid food blog burn out. So far, so good! I find it works best if I create a dish, photograph it and edit the photos on one day and then draft the post the next. I also find that my brain operates best in the morning for writing which is a bit interesting as I’m always up late and that’s when I’m finalizing posts.
