We officially closed on our new house on Friday. Such a relief! We’ve actually been renting our own house for the past two weeks but now it’s officially ours. As are the mountain of boxes, bubble wrap and packing paper strewn about every available inch of floor. I’ve been living each day on repeat.
Wake up, get everyone breakfast, unpack, run some type of errand, lunch, blog work, unpack, dinner, family time, blog work, go to bed to start everything over the next day. No complaints, I just feel like I need a few more hours each day to work on the unpacking portion of my day.
Slow Cooker Pulled Pork
Enter my Slow Cooker Cherry Cola Pulled Pork. Focusing on unpacking means that my thoughts are absolutely not centered on making dinner for everyone. So instead of choosing whether I’m feeding my family or putting all of our worldly possessions away, I’ve taken matters into my own hands by putting my slow cooker to work for me.
While I’m getting everyone breakfast, I simply toss dinner into the slow cooker and then when the clock strikes 5 o’clock-ish, dinner is close to being ready. Winning.
My Slow Cooker Cherry Cola Pulled Pork is one of my recent dinner favorites that involves little effort on my part yet has my mouth salivating all day as it’s aroma wafts from the kitchen. This sticky sweet main dish takes than 10 minutes to prepare which guarantees you have no excuse to not add it to your dinner menu, stat.
What Type of Pork Should You Use for Pulled Pork?
This delicious recipe begins with the right cut of meat. If you can find a whole shoulder roast at your grocery store, that’s your best choice. Unfortunately, they’re hard to find! Your next best bet would be a Boston butt which is half of the pig’s shoulder. Also delicious and perfect for this Slow Cooker Cherry Cola Pulled Pork recipe.
What to Serve with Slow Cooker Cherry Cola Pulled Pork
When I want a quick and easy dinner, chips are my go to side for this pulled pork sandwich. But when I have an extra few minutes, I love serving it alongside my Southwest Green Chile Corn Casserole or Mexican Street Corn Deviled Eggs.
I also highly recommend piling this pulled pork on top of a slice of my Simple Sweet Cornbread for a truly delicious meal!
How to Make Slow Cooker Cherry Cola Pulled Pork
[1] In a six quart slow cooker, place pork shoulder roast with the fat cap side down.
TIP: I like to make this recipe in this slow cooker – it comes in 4, 6 or 8 quart options – or using the slow cooker function of my Instant Pot. If using your Instant Pot, you’ll want to use the tempered glass lid instead of the top that comes with it and is used for pressure cooking.
[2] Sprinkle paprika, salt, ground mustard, garlic powder and brown sugar over pork.
[3] Flip pork should so that fat cap is now position on top. Pour cherry cola over pork.
TIP: While cooking, having the fat cap on top will act as a natural baster as the fat travels along the outside of the pork shoulder insuring a moist and delicious piece of meat.
[4] Cook on LOW for 10 hours.
Remove pork from slow cooker and shred with two forks before returning to slow cooker insert.
[5] Add barbecue sauce to pork.
[6] Stir together to combine.
