Pieces of thick cut corned beef and sauerkraut are stirred into a rich and gooey macaroni and cheese made with both cheddar and Swiss cheese and spiked with Guinness Beer before being drizzled with homemade thousand island dressing.

I know, I know. Another reuben inspired recipe. A few weeks ago I shared my Chicken Reuben Sheet Pan Nachos which are perfect for March Madness games beginning this week. And before that was my Reuben Waffle Fries, also game day ready! Or if you’re more of a traditional type, you really can’t go wrong with my Best Reuben Casserole. I promise though, I’ve saved the best for last. AND this Reuben and Guinness Mac and Cheese can use up any leftover corned beef you might have this weekend.
The list of reasons to give this recipe a try is quite lengthy. Not only does it feed a crowd, but it can truly be a one pot meal. Less dishes to wash? Back to this luscious Reuben and Guinness Mac and Cheese… It’s your favorite St. Patrick’s Day inspired sandwich and beer combination. It also happens to be a new spin on my Bacon Crusted Beer Mac and Cheese that so many of you have loved! I’m calling it modern Irish comfort food. You’ll call it delicious!
If you have leftover corned beef, this would be the perfect way to use it. Instead of deli meat, I actually had some corned beef I had made for a previous recipe that I had cooked in the slow cooker. I think I loved the use of the leftover corned beef better than the original recipe!
Reuben and Guinness Mac and Cheese
Ingredients
Reuben and Guinness Mac and Cheese
- 16 ounces cavatappi pasta
- 6 tablespoons butter
- 6 tablespoons flour
- 3 cups milk
- 1/4 cup stone ground mustard
- 12 ounces Guinness beer
- 2 cups shredded cheddar cheese
- 2 cups shredded Swiss cheese
- 1 teaspoon smoked paprika
- 1/2 teaspoon pepper
- 1/2 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon nutmeg
- 1-1/2 pounds thick cut deli sliced corned beef
- 22 ounces sauerkraut drained
- 2 cups panko bread crumbs
- chopped parsley to garnish
Thousand Island Dressing
- 1/2 cup mayonnaise
- 2 tablespoons ketchup
- 2 tablespoons sweet pickle relish
- 1/4 teaspoon minced garlic
- 1 teaspoon white vinegar
- pinch of salt
- 2-3 dashes Tabasco sauce
Instructions
- Preheat oven to 375 degrees.
- Prepare pasta according to package directions, cooking 1-2 minutes less than the time noted.
- In an American Kitchen 12" Premium Stainless Steel Saute Pan over medium-high heat, melt butter. Whisk in flour and cook until bubbly and golden in color.
- Whisk in milk, beer and mustard into saucepan.
- Stir in cheeses. Lower heat to medium and continue to stir, cooking for 5-6 minutes while mixture thickens.
- Stir in paprika, pepper, garlic powder, salt and nutmeg. Stir drained pasta, corned beef and sauerkraut into cheese sauce to coat. Top pasta with bread crumbs.
- Bake for 25-30 minutes or until heated through and bubbly.
- Remove from oven and let stand for 5 minutes.
- Meanwhile, in a small bowl stir together all dressing ingredients.
- Drizzle dressing over cooked pasta and garnish with chopped parsley.
