I joke that there are many things I wish I had known before moving to Colorado last year. You know, things like our city doesn’t plow the roads after it snows but they do plow the bike paths. (Insanity!) Or that there are spiders as large as my palm and rattlesnake sightings are frequent. (What the WHAT?!) Or that come August we have the most amazing peaches in the entire world. And the fact that I can get a flat of peaches delivered with my weekly milk order, aka minimal effort on my part, almost makes me forget about the snow, spiders and snakes. Knowing that peach season was just around the corner and I’d have them in abundance, I was more than happy to oblige. Especially since this recipe is so incredibly easy! I absolutely despise the term “dump cake” but this recipe is very similar. Although you won’t find any patches of dry cake mix in my cobbler as we go an extra step of stirring everything together so the peaches are evenly coated. That extra 30 seconds of work makes all the difference.

If you don’t have easy access to peach juice, you can easily substitute orange juice. Although I will admit that any extra peach juice is the perfect opportunity to stir together a pitcher of my refreshing Peach Prosecco Mojitos – one of my favorites!
Although I use a cake mix as a shortcut in this cobbler recipe, I’ve upped the flavor quotient by using Rodelle’s Almond Extract and sprinkling the top of the cobbler with sliced almonds. I love this extract because it contains just three ingredients. Water, alcohol and bitter almond oil. It doesn’t steal the flavor show from this Cake Mix Fresh Peach Cobbler, but it sure does make it extra special!
