Double Chocolate Peanut Butter Chocolate Chip Cookie Dough Cake
Ingredients
Chocolate Cake
Peanut Butter Chocolate Chip Cookie Dough
- 3/4 cup brown sugar
- 1 cup peanut butter
- 1/2 cup butter softened
- 1/2 cup sugar
- 1 teaspoon vanilla
- 1/3 cup water
- 1-1/2 cups flour
- 1/4 teaspoon salt
- 1-1/4 cup chocolate chips
Chocolate Ganache Frosting
- 2 cups dark chocolate chips
- 1-1/4 cups whipping cream
Instructions
Chocolate Cake
- Prepare cake according to recipe instructions.
Peanut Butter Chocolate Chip Cookie Dough
- In the bowl of an electric mixer, cream together brown sugar, peanut butter, butter and sugar.
- Add vanilla and water and mix until combined.
- Add flour and salt to bowl and mix until just combined. Fold in chocolate chips.
Chocolate Ganache Frosting
- In a microwave safe bowl, add chocolate chips and whipping cream. Microwave for two minutes on HIGH.
- Whisk together until well combined. Set aside and allow to cool to room temperature.
- In the bowl of an electric mixer with a whisk attachment, beat on medium-high speed for two minutes.
To Assemble Cake
- Place one layer of cake on cake plate. Top with layer of cookie dough, reserving approximately 1-1/2 cups of dough to use as garnish.
- Top cookie dough with second cake layer.
- Frost top and sides with whipped frosting.
- To garnish, use a medium cookie scoop to create cookie dough spheres and place evenly spaced around top of cake.
