It was in the mid-70s yesterday and this morning I woke up to howling winds and temperatures in the 40s. Winter, I see you peeking out from the mountain tops. Please just let me find the baby the right size of shoes – I’ve had three different Zappos orders with no luck! – and a winter coat and then you’re welcome to bring it. Well, except for the end of the month when we have family photos scheduled. Then you’re good.
With the cooler temps, I’m in full throttle comfort food mode. Bring on the casseroles, bring on the foods that make me think of family. I’m thinking Deep Dish Bubble Pizza, Homemade Chocolate Pudding Pie and Easy Snickers Brownies. I’m also thinking that I need to bring on the Hamburger Hotdish that apparently I’ve been hoarding photos of since April. (WHAT?!)
I remember my mom making this when growing up but honestly didn’t start making it until the last year or so. A recipe straight from the family cookbook my mom gave me for one of my wedding showers, it’s straight from the kitchen of my mom’s mom.
Not only is this casserole straight up comfort food, but there’s a 99.9% chance that I have all of the ingredients on hand without a trip to the grocery store. Or these days, an extra grocery delivery.
Easy Hamburger Hotdish
This eight ingredient Hamburger Hotdish is a classic family recipe that will never go out of style. Ground beef, egg noodles and creamed corn combine in this bubbly, cheesy comforting casserole. If you use an ovenproof skillet, this is truly a one dish meal. Hooray for less cleanup!
Hamburger Hotdish with Egg Noodles
My favorite part of this Hamburger Hotdish? Well, besides how incredibly easy it is and that there’s so little cleanup afterwards? The egg noodles peeking out the top. They have a bit of crunch to them while those buried in the cheesy goodness at the bottom are al dente and equally amazing. Love the contrast of texture!
This Hamburger Hotdish with egg noodles is the way my family has always made it. I know that there are other versions that use elbow macaroni, rice and even mashed potatoes, but to me, egg noodles are the only way to go.
How Do You Make Hamburger Hotdish?
[1] In a large skillet, brown ground beef.
[2] Add green pepper and onion to skillet.
[3] Cook for 2-3 minutes or until just tender.
[4] Remove skillet from heat and add egg, tomato soup, cheese, egg noodles, corn and salt.
[5] Stir to completely combine.
[6] Pour mixture into 9″ x 13″ casserole and cover. Bake at 350 degrees for 45 minutes. Uncover and bake for an additional 15 minutes.

Hamburger Hotdish
Ingredients
- 1 pound ground beef
- 1 green pepper diced
- 1 onion diced
- 1 egg beaten
- 1 10.75 ounce can tomato soup
- 2 cups shredded cheddar cheese
- 12 ounces egg noodles
- 1 14.75 ounce can creamed corn
- 1/2 teaspoon salt
- chopped parsley to garnish (if desired)
Instructions
- Preheat oven to 350 degrees.
- In a medium sized skillet, brown ground beef. Add green pepper and onion and cook for 2-3 minutes or until just tender.
- Remove from heat and stir in egg, tomato soup, cheese, egg noodles, corn and salt until combined.
- Pour into 9x13 casserole and cover. Bake for 45 minutes.
- Uncover and bake for an additional 15 minutes.
