This Homemade Caramel Icing comes to you straight from an old cookbook. One of the good ones that originates from a local community church. Although I don’t own the actual cookbook, I am lucky enough to have a photocopy which is squirreled away inside a cookbook of family recipes that my mom has shared with me.
My dad requested this Homemade Caramel Icing on his birthday cake each year. And he always requested this Eggless Milkless Chocolate Cake. Once you realize just how easy this icing recipe is, you’ll see why my mom was more than happy to grant his wish each year.
Not to mention the fact that each time I make this icing, I simply want to hide in my kitchen and eat it by the spoonful!

What is the Difference Between Icing and Frosting?
Before you get started, let’s make sure we’re all on the same page. This Homemade Caramel Icing is more like a glaze. It’s thinner and you’re easily able to pour or drizzle it over cakes, cupcakes, cookies or whatever your heart desires. Because of this, it looks amazing on a bundt cake as it easily slides into each nook and cranny. It hardens as it cools which means it needs to be used immediately.
Frosting is typically more thick and fluffy and must be spread onto a surface with a knife or spatula. This is the case for both my Cinnamon Cool Whip Frosting and Dark Chocolate Buttercream Frosting.
How to Make Homemade Caramel Icing
 In a small saucepan over medium heat, add milk, butter and brown sugar.
 Whisk together and bring mixture to a boil.
 Remove from heat and whisk in powdered sugar and vanilla.
 Drizzle over cake, cupcakes, cookies, etc. immediately.

- 1/4 cup milk
- 1/4 cup butter
- 1/4 cup brown sugar
- 2-1/2 cups powdered sugar
- 1/2 teaspoon vanilla
