I lost some major mama points this week. My soon-to-be eight year old daughter opened the fridge and happened to spy this Irish Cream Oreo Icebox Cake perched inside. Of course, she immediately was excited by the possibility of enjoying a slice after dinner when I had to burst her bubble.
Sorry, sweet girl, this dessert is for adults only. Enter conversation about legal drinking age. Although looking back on said conversation, adding adult beverages to dessert is downright genius. It means I don’t have to share with the four little ones of the house!
This six ingredient sweet treat is likely one of the easiest desserts you’ll ever make and absolutely perfect to enjoy for St. Patrick’s Day. Even better? There’s absolutely no baking involved and it tastes better and better the longer it sets in the fridge. How often can you say that about any food, let alone a dessert?

What is an Icebox Cake?
Icebox cakes were first introduced in the United States during World War I. They were popular as they used premade ingredients. An icebox cake is a dessert typically consisting of whipped cream and chocolate wafer cookies.
Layers of cookies and whipped cream are created and then refrigerated overnight in the icebox. The cookies soften as they absorb the moisture of the whipped cream creating a dessert that can easily be sliced into wedges to be enjoyed as a cake.
Chocolate wafer cookies are often hard to find in some areas so other types of cookies are sometimes substituted like I have done with this Irish Cream Oreo Icebox Cake. Plus, who doesn’t love Oreos?!
In this adult version of an Oreo icebox cake, layers of Oreos and Irish cream spiked whipped cream make up the layers of this dreamy Irish Cream Oreo Ice Box Cake. It’s hard to believe a recipe that takes just 10 minutes to prepare has such showstopping results when you see the layers created after cutting the first slice.
How to Make Irish Cream Oreo Icebox Cake
[1] In the bowl of an electric mixer, add heavy cream, mascarpone, sugar, vanilla and Irish cream.
TIP: To make this Oreo icebox cake family friendly, simply omit the Irish cream or substitute Irish cream flavored coffee creamer.
[2] Using a whisk attachment, mix on low speed until just combined and then mix on medium speed until it becomes thick and forms peaks.
TIP: To insure your kitchen isn’t bathed in cream, be sure to start the speed slowly until the mixture is combined!
[3] In an 8″ springform pan, place a single layer of Oreo cookies.
[4] Carefully cover cookies with 1/4 of the whipped cream mixture, smoothing into a flat layer with a rubber spatula.
TIP: Smoothing the whipped cream layer carefully will insure the Oreos underneath will not shift so that the layers of your cake will remain distinct.
Repeat Oreo and whipped cream layers three additional times so that you have a total of four layers of cookies and four layers of whipped cream, ending with a whipped cream layer.
Place plastic wrap directly on top of final layer of cream and refrigerate overnight.

- 12 ounces mascarpone cheese
- 1/2 cup sugar
- 1 teaspoon pure vanilla extract
- 1/4 cup Irish cream
- 2 14.3-ounce packages Oreo cookies
- dark chocolate bar and additional Oreos to garnish
Instructions
- In the bowl of an electric mixer, add heavy cream, mascarpone, sugar, vanilla and Irish cream.
- Using a whisk attachment, mix on low speed until just combined and then mix on medium speed until it becomes thick and forms peaks.
- In an 8″ springform pan, place a single layer of Oreo cookies.
