If one of my husband’s favorite beers and my love of dark chocolate had a secret rendezvous, this No Bake Guinness Chocolate Cheesecake would no doubt be the result of that meeting. Needless to say, we’ve been holding it hostage in the fridge the past few days with the hope that nobody else would catch a glimpse of it, lest we have to share a slice.
I’m happy to report, that thus far our mission has been a success.
This No Bake Guinness Chocolate Cheesecake takes just 15 minutes of prep and then happily hangs out in the fridge until you’re ready to serve it. Perfect for when you’re having friends over and just as perfect when you’re curled up next to a large black cat watching figure skating at the Winter Olympics.
You know. In case your weeknights look anything like mine as of late. Not a fan of stout beer? Never fear, neither am I! The good news is that there isn’t an overwhelming taste of beer but rather it brings out the richness of the dark chocolate.
And there’s lots of chocolate packed into this no bake dessert recipe. An Oreo crumb crust is flooded with my two ingredient Microwave Chocolate Ganache before being filled with a chocolate and stout flavored cheesecake filling.
I tend to live by the theory that if a little ganache is good, than a lot is so much better. I’m guessing I can’t be the only one that thinks this way, right? So I then topped this No Bake Guinness Chocolate Cheesecake with a large puddle of ganache and surrounded it with a hefty amount of dark chocolate curls.
This No Bake Guinness Chocolate Cheesecake has already secured it’s spot in my list of quick and delicious go to desserts alongside my Black Bottom No Bake Cherry Cheesecake and Black Forest No Bake Cheesecake. It’s obvious I have a thing for no bake cheesecake at this point, huh?
How to Make No Bake Guinness Chocolate Cheesecake
 Pour half of chocolate ganache into Oreo pie crust and refrigerate for one hour or until mostly set.
 In a medium bowl, add cream cheese, heavy cream, powdered sugar, salt, beer and 1/2 cup ganache.
TIP: To insure the smoothest cheesecake filling, your cream cheese should be at room temperature.
 Beat together with an electric mixer until smooth and combined.
 Spoon onto pie crust and spread into an even layer. Refrigerate and allow to set, approximately two hours.
 Reheat remaining ganache and spread into an even layer on center of cheesecake.
 Using a vegetable peeler, create curls from chocolate bar and add to top of cheesecake.

- 1 recipe Microwave Chocolate Ganache prepared
- 1 8" Oreo pie crust
- 8 ounces cream cheese softened
- 2 tablespoons heavy cream
- 1/2 cup powdered sugar
- 1/4 teaspoon salt
- 1/3 cup Guinness beer
- 1/2 dark chocolate bar
- Pour half of chocolate ganache into Oreo pie crust and refrigerate for one hour or until mostly set.
- In a medium bowl, add cream cheese, heavy cream, powdered sugar, salt, beer and 1/2 cup ganache.
- Beat together with an electric mixer until smooth and combined.
- Spoon onto pie crust and spread into an even layer. Refrigerate and allow to set, approximately two hours.
- Reheat remaining ganache and spread into an even layer on center of cheesecake.
- Using a vegetable peeler, create curls from chocolate bar and add to top of cheesecake.
