Here’s what we’ll be eating this week:
Meatless Monday: Southwest Carrot and Black Bean Soup. One of our new favorite soups. Who would’ve guessed I could get my meat and potato loving husband to enjoy a veggie based soup as much as this one?
I’ve selected Monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. My meat and potato eating husband tends to go along with this idea because I also make him a yummy dessert in addition to his meatless meal. What can I say? I’m nice like that!
Tuesday: Barbecue Chicken Pizza Skillet Lasagna. A definite new favorite at our house. The combination of two favorite recipes and it’ll be on your dinner table in under 30 minutes!
Wednesday: Cheeseburger Chimichangas. A new spin on cheeseburger and it’s freezer friendly!
Thursday: Enchilada Casserole. One of my absolute favorites and such a great comfort food! I love piling my slice sky high with avocados and Tabasco.
Friday: Blueberry Balsamic Chicken Meatball Pizza. These flavors just work! A great new pie to start the weekend off.
