It appears that Winter has returned with a vengeance – -40 degree windchills, anyone? This week it’s all about warm and comforting food that’s also quick to get on the table. I’m also sharing a great giveaway, giving you the chance to win a year’s supply of SeaPak products. Perfect for Lent that begins this week and also for two of the recipes included in this week’s menu plan!

Here’s what we’ll be eating this week:
Meatless Monday: Southwest Carrot and Black Bean Soup. A soup I created at the beginning of the year. I absolutely love the combination of textures in this soup – especially the next of fried onions on top!
I’ve selected Monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. My meat and potato eating husband tends to go along with this idea because I also make him a yummy dessert in addition to his meatless meal. What can I say? I’m nice like that!
Tuesday: Shrimp, Bacon and Kale Parmesan Pasta. My menagerie love this one as they get to dress their own bowls of pasta with shrimp and bacon. Letting them take part in creating their meals is always a great choice!
Wednesday: Chili Cheese Chicken Wings. It’s an appetizer for dinner! These easy chicken wings are prepared in the slow cooker and then smothered with chili. So delicious!
Thursday: Honeyed Shrimp with Crispy Kale and Gorgonzola Grits. Another great shrimp recipe! Crispy, crunchy, creamy – this one has it all! And seriously, gorgonzola stirred into grits? This is one you simply must try.
Friday: Pizza. No matter what the toppings, my Perfect Pizza Crust is always the base to kick off our weekend.
