i took last week off from menu planning so that i’d just use things i had in house and go from there. no matter when this seems like a good idea, it always ends up biting me in the behind as i find myself racking my brain each day to figure out what in the heck we’re going to eat for dinner. and really, why add extra drama to my day?
on to this week’s menu :
meatless monday : mediterranean chickpea burgers. from the latest issue of everyday food. from march’s everyday food. i simply adore this magazine. so much so i dogeared 21 pages upon my first look through. i’m ingrigued by the thought of a meatless burger. i mentioned the recipe to andy and he seemed fine with the idea. we’ll see how this plays out.
i’ve selected monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. my meat and potato eating husband tends to go along with this idea because i also make him a yummy dessert in addition to his meatless meal. what can i say, i’m nice like that.
tuesday : ravioli + spinach lasagna. i haven’t made this in a while but love that most of my friends have! lasagna on a weeknight = awesome.
wednesday : peperoncini beef sandwiches. andy’s request for the week. his new obsession which looks to have currently trumped his beloved lettuce wraps.
thursday : slow cooker spiced chicken stew with carrots. this one has been in my “to try” pile for a while now. i recently put my stack of torn out magazine pages in a binder so i can easily see them and put them into our menus as they fit.
friday : pizza. this is where i’ll mention that my dear 11 month old girl ate an entire slice of pizza last week at dinner. along with a kiwi and a couple of arrowroot cookies. she is a bottomless pit.

recipe reviews from the past few weeks
peanut butter chicken. i wasn’t overwhelmed by the flavor but it was so easy to put together that it helped to win me over. i won’t rush to make it again, but will put it in the vault for sometime in the future.
artichoke pasta. as my grocery store has been completely wiped clean of artichokes the past two weeks, i still haven’t been able to make this one. not cool.
