Here’s what we’ll be eating this week:
Meatless Monday: Four Cheese and Spinach Stuffed Shells. One of the kids’ favorite meatless meals. How can you can hardly go wrong with pasta and four types of cheese, right?
I’ve selected Monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. My meat and potato eating husband tends to go along with this idea because I also make him a yummy dessert in addition to his meatless meal. What can I say? I’m nice like that!
Tuesday: Chicken with Roasted Lemons and Green Olives. An unexpected flavor combination that totally works. The sauce for this dish is a definite hit with me.
Wednesday: Baked Spagansa. Comfort food at it’s finest! A marriage of spaghetti and lasagna – delicious!
Thursday: Barbeque Chicken Hash. Step away from the grill for this easy one dish recipe perfect for Summer.
Friday: Easy Chicken Pot Pie. I have a craving for pot pie – who cares if it’s 80 degrees outside!
