Menu Plan Monday – September 1, 2014

A visual menu of what we’ll be eating for dinner each night this week, including links to each recipe with multiple photos for each dish.

Here’s what we’ll be eating this week: 

Meatless Monday: Roasted Cumin-Lime Eggplant Quesadillas.  I’m such a fan of eggplant and we’ve received it the past two weeks in our CSA box.  This easy recipe highlights it with punches of cumin and lime.  So good!

I’ve selected Monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. My meat and potato eating husband tends to go along with this idea because I also make him a yummy dessert in addition to his meatless meal. What can I say? I’m nice like that!

Tuesday: Chili Chicken Lime Burgers.  More lime!  A copycat recipe of one of my favorite Trader Joe’s products.

Wednesday: Taco Frito Flatbread Pizza.  Inspired by a favorite pizza at a local pizza place.  Love using naan as the base for a soft, pillowy texture.

Thursday: Slow Cooker Huli Huli Chicken.  A fun name and equally fun taste.  One of the easiest slow cooker recipes and always a hit with everyone around the dinner table.

Friday: Pizza.  Such a great way to kick off our weekend.  Our six year old has loved helping me make pizza recently.  She makes one and I make the other.  Even she can create a pie using my Perfect Pizza Crust recipe!

And last, but certainly not least… 

It feels only appropriate to announce on Labor Day that we’re thrilled to be welcoming our fourth child in March.  Three out of four of our children will have March birthdays.  Birthday season has been taken to a whole other level at our house!  Needless to say we’re thrilled and excited for this next crazy chapter of our lives.
