Today marks the end of two straight weeks on call for Andy and this past weekend was a bit rough. It’s time to regroup and get ready for a week full of activity.
Here’s what we’ll be eating this week :

Meatless Monday : Angel Hair with Tomatoes and Garlic. Hello, way out of focus photo! UGH. I wonder if everyone left with photos like this taken by the lovely Williams Sonoma employee? Regardless, I had the pleasure of meeting Chef Michael Symon at a book signing on Saturday. A definite highlight of my two months thus far in Cleveland. So personable.
He was there signing his new cookbook that was released last week, 5 in 5. Looking forward to trying the first recipe from my autographed copy!
I’ve selected Monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. My meat and potato eating husband tends to go along with this idea because I also make him a yummy dessert in addition to his meatless meal. What can I say? I’m nice like that!

Tuesday : Turkey Meat Loaf. After a long stretch of call, I know Andy will appreciate one of his favorite meals. Served with a side of potatoes and green beans, this fits the bill!

Wednesday : Slow Cooker Lemon Chicken. This is a light and filling dish that is always a winner. Love that even if I don’t get it in the slow cooker first thing in the morning, I know as long as I have everything together by lunch we’ll still have a fantastic dinner.
Thursday : Peperoncini Beef Sandwiches. One of our favorites and the word “easy” just doesn’t describe how simple this slow cooker dish is!
Friday : Chicken Pot Pie. A friend made this meal for us after I had Carson and it was simply amazing. I know I’ll have to double this as it won’t last long!
New Recipe Review
BBQ Chicken and Pineapple Quesadillas. Yum! Not much thinking involved on this one which made for a quick and easy dinner. I substituted red onion for the jalapeno in the kids’ quesadillas so it wouldn’t be too spicy. Definitely would make these again.
