I’m certainly glad I’m sharing this Slow Cooker Sausage Lentil and Arugula Soup with you today instead of yesterday. Today, the first snow flakes of the season are falling outside making the mountains nearly invisible. Yesterday we had a record high of 80 degrees and my menagerie was sporting shorts and t-shirts like it was the middle of summer instead of the week before Thanksgiving.
Today I was dealing with melt downs from the two that sit in the third row of our car about how supremely difficult it was for them to buckle themselves into their car seats this morning with their required winter wear. Such trials and tribulations, my friends. The struggle is so real when you’re four and six years old.
But back to this delicious lentil soup recipe. This is an absolute gold medal winner and was well received by everyone around our dinner table.
It was completely inspired by my Slow Cooker Lemon Rosemary Lentil Soup which has been a hit since the moment it went live almost two years ago. Although absolutely delicious and hearty, I started playing around with the idea of a meat and lentil soup that was just as easy to create. Something to knock my meat loving husband’s socks off.
This Slow Cooker Sausage Lentil and Arugula Soup is easy. BEYOND easy. Sausage and lentils bespeckle a tomato soup base before being swirled together with peppery, fresh arugula.
SIDE NOTE: If you’re looking for an amazing slow cooker, I can’t recommend the one I chatted about in this Slow Cooker Pork Roast and Cherries recipe enough. I mean, the fact that it’s non-stick and is a breeze to clean is amazing in and of itself, but it also will brown, simmer and steam as well.
I love hearty slow cooker soups like this Slow Cooker Sausage Lentil and Arugula Soup and my Slow Cooker Mediterranean Beef Stew. They seem to warm you from the inside out and are absolutely necessary during the cold winter months. This snow has me craving yet another bowl.
And bread. Crusty bread is the perfect dipping device for this soup. They compliment each other perfectly!
Slow Cooker Sausage Lentil and Arugula Soup
- 2 pounds sweet Italian sausage casings removed
- 1 onion chopped
- 4 garlic cloves minced
- 4 cups chicken stock
- 2 cups water
- 2 cups red lentils
- 2 28- ounce cans diced tomatoes
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 4 ounces arugula
- In a six quart slow cooker, saute sausage until brown and in crumbles.
- Add all other ingredients, except arugula and stir gently to combine.
- Cook on HIGH three hours or LOW six hours.
- Before serving, stir arugula into soup until wilted.
