Here’s what’s on our family meal plan this week:
Meatless Monday: Slow Cooker Creamy Tomato Soup. I absolutely adore my slow cooker – it slow cooks, sautes and browns! – and soups are one of my favorites to have waiting for me come dinner time.
I’ve selected Monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. My meat and potato eating husband tends to go along with this idea because I also make him a yummy dessert in addition to his meatless meal. What can I say? I’m nice like that!
Tuesday: Chipotle Chili Fish Tacos with Peach Pineapple Salsa. It’s Taco Tuesday – which makes me think of the Lego movie now every time I mention it. Love the mix of smoky and cool flavors in this recipe.
Wednesday: Crockpot Carnitas Lettuce Wraps. An amazingly easy and delicious weeknight meal idea.
Thursday: Taco Potato Wedge Nachos. A twist on the traditional taco night!
Friday: Chicken Bacon Swiss Spaghetti Pizza. Spaghetti as pizza crust?! I bet your family will love it just as much as ours did!
Breakfast: S’mores Overnight French Toast Casserole. Overnight french toast casseroles are one of my favorite weekend treats to make as I can put it together after I get the menagerie to bed and only need to put it in the oven the next morning!
Dessert: Lavender Peach Cake with Walnuts. If this cake doesn’t sound delicious, I don’t know what does. What an amazing flavor combination!
