Here’s what’s on our family meal plan this week:
Meatless Monday: Cheesy Pasta with Roasted Cauliflower. The only way I truly like cauliflower is roasted. Add it to cheesy pasta and I’m so in.
I’ve selected Monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. My meat and potato eating husband tends to go along with this idea because I also make him a yummy dessert in addition to his meatless meal. What can I say? I’m nice like that!
Tuesday: Chipotle Pasta Skillet. I love skillet meals, especially those with a bit of heat!
Wednesday: Oven Baked Chimichurri Chicken Fajitas. My new favorite way to make fajitas and the perfect use for all the fresh parsley and cilantro growing in gardens right now.
Thursday: Homemade Sweet Chili Grilled Chicken. Homemade anything is always better and this grilled chicken looks amazing.
Friday: Green Goddess Pizza. Love this twist on a traditional pie. The perfect way to say hello to the weekend!
Breakfast: Mini Sausage Pancake Muffins. I have absolutely no doubt that my menagerie would fall in love with these!
Dessert: Banoffe Pie. I’m thinking I’ll be making two of these. One for me and one for the rest of my family. I don’t like to share.
