Here’s what we’ll be eating this week:
Monday: Enchilada Casserole. Typically we eat meatless on Mondays, but not today. It’s my birthday and I’m going to have my favorite comfort food, thankyouverymuch. I’m also planning on baked potatoes and Green Chile and Chive Cornbread Casserole. Hoping to share this recipe in the near future.
Tuesday: Slow Cooker Chicken Parmesan Sandwiches. We haven’t enjoyed these in way too long – time to remedy that situation!
Wednesday: Porcupine Meatballs. Yet more comfort food! I think it’s most definitely the theme for the week.
Thursday: Chipotle Chicken Bacon Ranch Chicken Salad. It’s supposed to be warmer this week, the perfect time for a make ahead, cool meal.
Friday: Bacon Double Cheeseburger Pizza. The perfect start to the weekend!
