Friends, do you know the goodness that is Halloween Oreos? When I spy the first package on store shelves, I buy them with reckless abandon. And I mean reckless. I stockpile them in fear that I will run out and then I’ll have to wait another 12 months to get my hands on them.
This season alone I swear I’ve purchased 20 packages. (Did I just admit that?!) The fact that I used a package for these Pumpkin Spice Oreo Cheesecake Brownies should let you know just how delicious this dessert is. I wouldn’t dare use my stockpiled Oreos for just any recipe!
The starting point for these Pumpkin Spice Oreo Cheesecake Brownies is none other than my decadent One Bowl Chocolate Fudge Brownies. The brownie batter is spiked with pumpkin spice extract before being dolloped with cheesecake filling and sprinkled with crumbled Oreos.

The key ingredient that makes this Oreo cheesecake brownie recipe stand out from the crowd? Pumpkin spice extract. I prefer the Rodelle brand. They also make the only baking cocoa that I stock in my pantry.
The pumpkin spice extract features all of the flavors of fall – cinnamon, clove, vanilla, nutmeg and ginger – along with a splash of vanilla extract. It’s a shortcut to amazing flavor, rather than digging through your spice cabinet.
How to Make Pumpkin Spice Oreo Cheesecake Brownies
[1] To create brownie batter, in a medium sized saucepan over medium heat, melt butter.
[2] Stir baking cocoa and coffee into butter.
[3] Add sugar, eggs and pumpkin spice extract and stir to combine.
TIP: Need brownies immediately and don’t have pumpkin spice extract? Try subbing vanilla extract with a pinch of pumpkin pie spice!
[4] Add flour, baking powder and salt.
[5] Stir brownie batter together until just combined.
[6] Pour batter into greased 9″ x 13″ pan.
[7] To begin cheesecake topping, in a medium bowl, add cream cheese.
[8] Using an electric mixer on medium speed, beat cream cheese until smooth.
TIP: Starting with softened cream cheese and beating it by itself at first insures no lumps!
[9] Add sugar, pumpkin spice extract and egg to cream cheese.
[10] Mix together on medium speed until combined.
[11] Spoon cheesecake mixture in large dollops over brownie batter, leaving some batter visible. Use a knife to swirl cheesecake topping and brownie batter together.
TIP: Make sure the tip of your knife only goes through the top half of your batter so you don’t scratch your baking pan!
[12] Sprinkle surface of brownies with crumbled Oreos and bake 23-25 minutes or until a toothpick inserted into middle removes cleanly.

- 3/4 cup butter
- 3/4 cup cocoa
- 1/4 cup prepared coffee
- 1-2/3 cups sugar
- 2 eggs
- 2 teaspoons pumpkin spice extract
- 1-1/3 cups flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Oreo Cheesecake Topping
- 8 ounces cream cheese softened
- 1/3 cup sugar
- 1 egg
- 1/2 teaspoon pumpkin spice extract
- 20 Oreo cookies
Instructions
Brownies
- Preheat oven to 350 degrees.
- In a medium saucepan over low heat, melt butter.
- Stir in baking cocoa and coffee.
- Add sugar, eggs and pumpkin spice extract to saucepan and stir to combine.TIP: Need brownies immediately and don't have pumpkin spice extract? Try subbing vanilla extract with a pinch of pumpkin pie spice!
- Stir in flour, baking powder and salt.
- Pour batter into greased 9" x 13" pan.
Oreo Cheesecake Topping
- In a medium bowl, add cream cheese.
- Using an electric mixer on medium speed, beat until smooth.TIP: Starting with softened cream cheese and beating it by itself at first insures no lumps!
- Add sugar, pumpkin spice extract and egg and mix until combined.
- Spoon cheesecake topping in large dollops over brownie batter, leaving some batter visible.TIP: Make sure the tip of your knife only goes through the top half of your batter so you don't scratch your baking pan!
- Sprinkle surface of brownies with crumbled Oreos.
- Bake 23-25 minutes or until a toothpick inserted into middle removes cleanly.
- Let cool completely prior to serving.
