If I asked you to name a classic flavor combination, what would it be? Peanut butter and jelly? Spaghetti and meatballs? I’d 100% tell you that my answer would be s’mores. Chocolate, marshmallow and graham cracker. I just can’t get enough. Especially when it comes together so easily in dishes like my Double Chocolate No Bake S’mores Pie.
This isn’t my first s’mores rodeo and it surely won’t be my last. You’ve likely already fallen in love with my Peanut Butter Cup S’mores Brownies and Dulce de Leche Swirl S’mores Brownies but this pie is a bit different.
Not only is the classic s’mores flavor combination on point in this pie, the recipe title contains two of my favorite kitchen words. No bake. That’s right. The fridge does all the work to make this Double Chocolate No Bake S’mores Pie. No standing over an open flame, no heating up an oven.
The only heat source used to create this decadent pie is a kitchen torch. And believe me, even if you don’t own one yet, this pie is reason enough to purchase one.
Another way my pie stands out from the crowd? Not one, but two types of chocolate are used. Forget the boring, plain graham crackers that everyone typically uses for s’mores. I’ve decided to go for an extra flavor layer by using chocolate graham crackers, and believe me, it makes all the difference!
This six ingredient pie couldn’t be easier. A homemade chocolate graham cracker crust is filled with a pool of my Microwave Chocolate Ganache before being topped with a cascading cloud of marshmallow fluff that’s torched to campfire perfection. My Double Chocolate No Bake S’mores Pie is sure to please kids, kids at heart and anyone and everyone in between.
Can You Make S’mores Pie Ahead of Time?
Even though this delicious dessert is super chocolatey, I think the thing I like most about this Double Chocolate No Bake S’mores Pie is that you can make it ahead of time. I love to make it early in the day and have it ready and waiting for me in the fridge when dessert time arrives.
One less thing to think about for me, and the best surprise for those sitting around our dining room table when I open the fridge doors.
Do You Need to Refrigerate S’mores Pie?
I do recommend that this Double Chocolate No Bake S’mores Pie needs to be stored in the fridge. It increases the stability of the pie so that the ganache doesn’t become a melty mess and that the marshmallow fluff stays the right consistency as well.
Not only that, but this no bake pie tastes absolutely amazing at a cold temperature!
How to Make No Bake S’mores Pie
[1] Add chocolate graham crackers to bowl of food processor.
[2] Pulse until you’ve created coarse crumbs.
TIP: I like to leave the crumbs a bit larger to give the crust more texture and crunch
[3] In a medium bowl, add chocolate graham cracker crumbs, butter and sugar.
[4] Stir together until completely combined.
TIP: Mixture will resemble coarse sand.
[5] Pour graham cracker crumbs into 9″ pie plate.
[6] Press crumb mixture on bottom and up sides of pie plate. Refrigerate to set.
TIP: Using the bottom of a small measuring cup or glass to press crumb mixture into an even layer.
[7] Add heavy cream and dark chocolate chips to microwave safe bowl.
[8] Microwave on HIGH for 1 minute and stir together to combine.
[9] Pour prepared ganache into chilled pie crust and return to refrigerator until set.
[10] Spoon marshmallow fluff into chilled pie and refrigerate for one hour.
[11] Before serving, brown marshmallow filling to desired color using a kitchen torch.
TIP: To avoid scorching the top of the marshmallow fluff or setting it on fire, be sure to hold the torch back away from the pie and to keep it continually moving.
