
Here it is, the last menu plan of 2013! Looking forward to a week of wrapping up house projects, – I’m hoping to finally finish the girls’ room this week – organizing and cooking. Word on the street is that our range will arrive this week. My mind has been churning with ideas of what I’ll make first ever since I got the news.

Here’s what we’ll be eating this week :
Meatless Monday : Lentil and Brown Rice Tacos. After a week of not eating as well as I have been, I’m ready to get back on track. While the rest of the family will enjoy this great fill in tacos or nachos, I’ll have mine as a taco salad.
I’ve selected Monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. My meat and potato eating husband tends to go along with this idea because I also make him a yummy dessert in addition to his meatless meal. What can I say? I’m nice like that!

Tuesday : Appetizers. We love to celebrate New Year’s Eve by staying in and noshing on appetizers with a few board or card games throw in for good measure. This Slow Cooker Salsa Verde Corn Dip will definitely be making an appearance.

Wednesday : Slow Cooker BBQ Chicken Pizza Soup. Soup is always a great option for New Year’s Day when we don’t have much on the agenda but watching the Rose Parade and staying in our pajamas. Bonus points for me as I can put everything in the slow cooker after breakfast and consider dinner prep done for the day!

Thursday : Skillet Burgers. I had these on my menu plan for a lunch idea last week but we didn’t get to them. Luckily I was able to throw the ingredients in the freezer so that we could enjoy them this week instead.
Friday : Chipotle Chicken Chowder. A Pinterest find from yesterday that looks amazing. Can’t wait to give it a try.
