My first menu plan post the arrival of baby number four. If there was ever a time that a menu plan is going to make my life easier, it’s definitely now! I actually made dinner for the first time on Thursday last week and lived to tell about it. Here’s hoping that with a plan in place, we’ll be back in our regular routine. Well, as much as can be expected with a newborn and attempting to fix dinner during the witching hour. Needless to say, easy is the name of the game this week!

Here’s what we’ll be eating this week:
Meatless Monday: Slow Cooker Lentil and Brown Rice Tacos. A delicious and easy meal to begin our week. Taco night for the win!
I’ve selected Monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. My meat and potato eating husband tends to go along with this idea because I also make him a yummy dessert in addition to his meatless meal. What can I say? I’m nice like that!
Tuesday: Bridge Brunch Casserole. Both of the big girls mentioned this recipe earlier this week so it’ll be a breakfast for dinner meal this week! It’s perfect as I can put it together in the morning and then put it in the fridge until I’m ready to bake it at dinner time. This is also a perfect Easter breakfast idea!
Wednesday: Easy Sloppy Joes. With easy in the title of this recipe, it was destined for this week’s menu! It also is one of our favorites and paired with a salad or fries, it’s the perfect weeknight meal.
Thursday: Quick and Easy Ravioli and Spinach Lasagna. The only lasagna recipe that I make as it means lasagna on a weeknight is totally possible.
Friday: Slow Cooker Chicken Parmesan Sandwiches. Another great full of flavor sandwich idea to end the week with.
