This time of year our elementary school has the first parent/teacher conferences of the year. To make things a bit nicer for our teachers who endure a much later day at school than normal, I help to arrange food for them in the teacher’s lounge.
These Butterscotch Marshmallow Brownies were my contribution this week. I’m hoping that the teachers enjoyed them half as much as my family did. Goodness knows those amazing humans that spend all day with my children deserve all the brownies in the universe for all that they do each day.

Sure, I’ve made several brownie recipes with marshmallows covering the top, like my infamous Peanut Butter Cup Stuffed S’mores Brownies and my mashup Cherry Cola S’mores Brownies, but the secret to maximum gooey-ness in these Butterscotch Marshmallow Brownies is stirring the marshmallows into the batter before baking.
As the batter bakes and the marshmallows melt, the fudgy-ness factor of these brownies goes through the roof!

Based on my One Bowl Chocolate Fudge Brownies recipe, these Butterscotch Marshmallow Brownies may be the last brownie recipe you’ll ever need. An indulgent, fudge brownie base is studded with miniature marshmallows before being showered with dark chocolate and butterscotch chips.
When they emerge from the oven, all warm and gooey, you’ll be reaching for a knife to cute them with one hand and a large glass of milk with the other.

How to Make Butterscotch Marshmallow Brownies
[1] In a large saucepan over low heat, melt butter.
[2] Add cocoa and coffee to melted butter.
[3] Stir together to combine.
[4] Add sugar, eggs and vanilla to saucepan.

[5] Stir together until well combined.
[6] Add flour, baking powder and salt.
[7] Stir together until just combined
TIP: You’ll want to stir only until there are no dry ingredients visible.
[8] Add marshmallows to brownie batter.

[9] Stir together to combine.
[10] Pour batter into greased 9″ x 13″ baking pan and smooth into an even layer.

[11] Sprinkle chocolate and butterscotch chips over batter in an even layer.
Bake at 350 degrees for 18-20 minutes or until just set and a toothpick inserted into the center removes cleanly.

Ingredients
- 3/4 cup butter
- 3/4 cup cocoa powder
- 1/4 cup strong coffee prepared
- 1-2/3 cups sugar
- 2 eggs
- 2 teaspoons vanilla
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1-1/3 cup flour
- 2 cups miniature marshmallows
- 1/2 cup dark chocolate chips
- 1/2 cup butterscotch chips
Instructions
- Preheat oven to 350 degrees.
- In a large saucepan over low heat, melt butter.
- Add cocoa and coffee to melted butter.
- Stir together to combine.
- Add sugar, eggs and vanilla to saucepan.
- Stir together until well combined.
- Add flour, baking powder and salt.
- Stir together until just combined
- Add marshmallows to brownie batter.
- Stir together to combine.
- Pour batter into greased 9″ x 13″ baking pan and smooth into an even layer.
- Sprinkle chocolate and butterscotch chips over batter in an even layer.
- Bake at 350 degrees for 18-20 minutes or until just set and a toothpick inserted into the center removes cleanly.
