I mean, talk about totally dreamy, right? But it gets even better, my friends! This isn’t any dream. In fact, you can head to your kitchen now and get to work on this Coffee Cookies and Cream Cheesecake Brownie Cake. Run, don’t walk!

And those bites of heaven? The brainchild of my friend Jocelyn at Inside Bru Crew Life. I met Jocelyn when I went on a press trip with the Ohio Poultry Association a few years ago and she’s every bit as sweet and personable as she appears online. And she never fails to come up with a dessert that I instantly fall in love with. Her new cookbook, Cheesecake Love, has over 75 delicious recipes, each featuring a creative and innovative way to incorporate cheesecake, including the recipe for this Coffee Cookies and Cream Cheesecake Brownie Cake.

The first Coffee Cookies and Cream Cheesecake Brownie Cake I made disappeared so quickly that I’m already eager to make another one. Next time I’m thinking of using my One Bowl Chocolate Fudge Brownies recipe as the base. Or including a layer of my Microwave Chocolate Ganache. Or, better yet, making the cheesecake layer chocolate similar to my Black Forest No Bake Cheesecake. You know, to truly take it over the top!

Coffee Cookies and Cream Cheesecake Brownie Cake
Ingredients
Brownie
- 1/2 cup butter
- 1/4 cup cocoa powder
- 1 cup sugar
- 1 teaspoon vanilla
- 2 eggs
- 1/2 teaspoon salt
- 3/4 cup flour
- 1/4 teaspoon baking powder
Cheesecake
- 2 teaspoons instant coffee granules
- 2 tablespoons hot water
- 8 ounces cream cheese softened
- 1/4 cup sugar
- 1 16- ounce tub of Cool Whip
- 21 Oreo cookies chopped
Instructions
Brownie
- Preheat oven to 350 degrees.
- Grease a 9" springform pan.
- In a small saucepan over low heat, melt better.
- Whisk in cocoa powder until combined.
- Add sugar and vanilla and whisk until combined.
- Stir in eggs.
- Add salt, flour and baking powder and stir until just combined, being careful to not overmix.
- Spread batter into bottom of pan and bake for 27-28 minutes or until a toothpick inserted into the center removes cleanly.
- Remove from oven and allow to cool completely.
- Run a sharp knife around the edge of brownie to loosen it from pan, if needed.
Cheesecake
- In a small bowl, dissolve coffee granules in hot water. Set aside.
- In the bowl of an electric mixer, beat together cream cheese and sugar until creamy and smooth.
- Add coffee mixture to bowl and beat until fully combined.
- Gently fold in 3 cups of Cool whip with a rubber spatula.
- Gently stir in 2 cups of the chopped Oreos until combined.
- Spread cheesecake mixture over cooled brownie and refrigerate for 2-3 hours or until set.
Assembly
- Spread remaining Cool Whip evenly over cheesecake.
- Carefully remove cake from springform pan and top with remaining chopped Oreos.
