I’ve had this Triple Chip Cookies recipe in my back pocket just waiting to share it with you. Then I went on vacation. And then school started. And now here I am, over a month later, finally getting to share these bakery style cookies with you.
Believe me, they’re worth the wait. They’ve acted as a thank you to a friend for lending me dresses to go on said vacation and as a Sunday School treat for our church, where our pastor labeled them “sinful cookies.” You know I totally took that compliment and ran with it.
What are Triple Chip Cookies?
Triple Chip Cookies are the result of me rummaging around in my pantry and deciding I wanted ALL of the baking chips that I pulled off my baking shelf. Dark chocolate chunks, white chocolate chips and butterscotch chips are the stars of this loaded cookie that is definitely more mix-ins than cookie.
I realize that technically my cookies are a double chip and a single chunk cookie, but I’m hoping you’re willing to overlook this technicality. Those dark chocolate chunks are like melty puddles of heaven.
That’s why they’re also the star of my Double Chocolate Walnut Brownie Cookies, Raspberry Chocolate Chunk Oatmeal Muffins and Triple Chocolate Peppermint Skillet Cookie. The 365 brand from Whole Foods is what I stock in my pantry and I swear I go through at least two bags a week in various sweet treats.
What is the Difference Between Butter and Shortening in Cookies?
Preheat your oven and get out your electric mixer as it’s doing all the work for you to create this baking chip studded cookie batter. Shortening, brown sugar and sugar are creamed together to begin the cookie dough base.
Cookies made with shortening instead of butter tend to not be as flat and this is exactly the case for these Triple Chip Cookies. These cookies are more crisp around the edges and soft and fluffy in the middle.
How To Make Triple Chip Cookies
[1] In the bowl of an electric mixer, add shortening, brown sugar and sugar.
[2] Cream together on medium speed until fluffy and combined.
[3] Add eggs, coffee and vanilla to bowl.
TIP: Not a fan of coffee? Neither am I! I promise you won’t taste it in your cookies, instead it simply deepens the flavor of the chocolate.
[4] Beat together on medium speed until completely combined.
[5] Add flour, salt and baking soda.
[6] Mix on low speed until almost combined.
TIP: You want to still see flour within the dough before the next step. This insures that you won’t overwork the dough resulting in a tough cookie.
[7] Add chocolate chunks, white chocolate chips and butterscotch chips.
[8] Stir together to combine, being careful not to over mix.
[9] Using a large cookie scoop, form and drop dough onto silicone mat or parchment lined baking sheet, being sure not to crowd cookies.
TIP: I love to use these precut parchment sheets when I’m baking to make my time in the kitchen super easy and less messy.
Bake at 350 degrees for 12-14 minutes. Allow to cool on cookie sheet five minutes before transferring to wire rack to cool completely.
TIP: Want to make your Triple Chip Cookies look like they came straight from a bakery? After your cookies come out of the oven, add additional chips to the top of each cookie.
How To Bake Triple Chip Cookies
These Triple Chip Cookies are BIG. As in the size of my hand. And I’m 6′ tall and can palm a basketball if that gives you any sense of scale. Instead of using my typical medium cookie scoop, I grabbed my large cookie scoop from the drawer instead.
The resulting cookie looks like something you’d tell a barista to add to your usual morning drink order. This recipe makes 18 large cookies and you’ll likely be able to fit only eight balls of dough on a single cookie sheet. You won’t want to crowd them!

Instructions
