Here’s what we’ll be eating this week:
Meatless Monday: Cherry Tomato and Tortellini Soup. After having to turn on the air conditioner last week, the temperatures are falling again which is perfect for this favorite Spring soup.
I’ve selected Monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. My meat and potato eating husband tends to go along with this idea because I also make him a yummy dessert in addition to his meatless meal. What can I say? I’m nice like that!
Tuesday: Bacon Wrapped Cherry Merlot Pork Tenderloin. You won’t believe how amazingly easy this one is!
Wednesday: Chili Chicken Lime Burgers. Sometimes copycat recipes are better than the original and this is one of those recipies.
Thursday: Shrimp, Bacon and Kale Parmesan Pasta. Totally unexpected comfort food.
Friday: Smoky Pistachio Crusted Chicken Tenders. A definite must try and loved by adults and children alike!
