Here’s what we’ll be eating this week:
Meatless Monday: Cherry Tomato and Tortellini Soup. One of our very favorite soups that takes less than 30 minutes to prepare. The perfect meal for a chilly day when our temps aren’t even supposed to hit 60 degrees.
I’ve selected Monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. My meat and potato eating husband tends to go along with this idea because I also make him a yummy dessert in addition to his meatless meal. What can I say? I’m nice like that!
Tuesday: Grilled Barbecue Bacon Meatloaf Sandwich. Likely my most favorite sandwich that I created this summer. Granted, anything with a runny egg on top is a winner in my book but this sandwich is a winner for sure!
Wednesday: Smoky Pistachio Crusted Chicken Tenders. Kid and adult friendly, the smoky nut coating on these chicken tenders is delicious!
Thursday: Greek Chicken and Kale Pita Sandwiches. A perfect quick meal on a warm evening. I have grand plans of eating out in the backyard to enjoy them both.
Friday: Movie Night. The menagerie looks forward to movie night like they look forward to holidays. Dinner of popcorn and other assorted treats enjoyed in front of a surprise movie.
